Honey Buttermilk Cornbread

Ingredients

  • 1/2 cup butter
  • 1/4 cup sugar
  • 1/3 cup honey
  • 2 eggs
  • 1 cup buttermilk
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda

Instructions

  • Preheat your oven to 350ºF.
  • In a bowl, mix together butter, sugar, honey, eggs and buttermilk until completely combined.
  • In another bowl, mix together the remaining dry ingredients.
  • Pour wet mixture into dry mixture mixing carefully until completely incorporated and batter has no lumps.
  • Pour batter into a 9 or 8 inch skillet or square pan. Place in the oven and bake for 25 to 35 minutes or until a toothpick inserted in the middle of the cornbread comes out clean.
  • Let it cool for a few minutes before cutting and serving.
