Wash and roughly chop figs.
Place figs in a sauce pan followed by sugar and lemon juice.
Place the pan over medium high heat. Pour in 1/2 cup water and stir.
Once mixture comes to a boil, lower heat and simmer for 15 to 20 minutes, stirring occasionally. Once figs are soft, you can mash them with a potato masher or fork.
Turn the heat off and if desired, stir in a couple tablespoons of Bourbon.
Place in clean jars and screw on the lids (not too tightly). Let it come to room temperature before storing in the refrigerator.
