Add milk, yeast and about a teaspoon of your sugar to a bowl. Mix and set aside for about 5 minutes or until yeast has proofed.
In a large bowl, add melted butter and sugar then mix together.
Next add salt, 2 eggs and an egg yolk (set egg white aside for egg wash) then mix in yeast mixture.
Next mix in flour, starting with 2 cups then sprinkling in the rest between mixing. When flour is fully incorporated and the dough is not too sticky, knead for 5 to 10 minutes or until smooth.
Cover the bowl and place in a warm area to rise for an hour.
After dough has risen, remove cover then punch to release air and transfer to a floured or non stick surface.
Divide dough into about 8 to 12 parts. Form into balls or desired design.
Place shaped dough portions on a baking sheet about an inch or two away from each other. Cover and keep in a warm place to proof for 30 minutes.
Set oven at 350°F to preheat.
When buns have proofed, remove cover then brush each of them with reserved egg white.
Place in the oven to bake for about 15 minutes or until buns are golden brown.
Transfer immediately to a cooling rack. Serve warm.
