Sweet Brioche Buns

These Sweet Brioche Buns are buttery, pillowy soft and they will have your home smelling like a French bakery. They require ingredients that you probably already have. In addition they are great toasted for breakfast, as sandwich buns for lunch or as rolls for dinner. After you try these Brioche Buns, you won’t care to buy them at the store or bakery anymore!

This recipe came about when I was watching the Great British Baking Show with a friend. They were making bread and while watching the bakers come up with different bread designs I was inspired to not only make a brioche type bread but to braid it. Well I did just that. I made bread just kind of winging it and not taking note of any quantities I was putting in it. I posted a video of me braiding the bread on Tik Tok and among all of my videos, this one decided to go viral. Now I had a bunch of people asking me for the recipe which I didn’t have 😀

Well I promised I would come up with a similar recipe to share so this is it. And it works great! This recipe forms such a beautiful sweet bread with tender buttery layers. Honestly, after making this bread, I can’t get myself to buy certain breads again; I’m not allowed lol. I’ve made bread before but after this one I just want to try making different types of breads. Sweet Brioche Buns

Ingredients

  • 2 1/4 tsp yeast
  • 1/2 cup milk room temperature or slightly warm
  • 1/2 cup butter melted
  • 1/2 cup sugar
  • 1 tsp salt
  • 3 eggs 1 separated
  • 3 to 3 1/2 cups flour all purpose or bread

Instructions

  • Add milk, yeast and about a teaspoon of your sugar to a bowl. Mix and set aside for about 5 minutes or until yeast has proofed.
  • In a large bowl, add melted butter and sugar then mix together.
  • Next add salt, 2 eggs and an egg yolk (set egg white aside for egg wash) then mix in yeast mixture.
  • Next mix in flour, starting with 2 cups then sprinkling in the rest between mixing. When flour is fully incorporated and the dough is not too sticky, knead for 5 to 10 minutes or until smooth.
  • Cover the bowl and place in a warm area to rise for an hour.
  • After dough has risen, remove cover then punch to release air and transfer to a floured or non stick surface.
  • Divide dough into about 8 to 12 parts. Form into balls or desired design.
  • Place shaped dough portions on a baking sheet about an inch or two away from each other. Cover and keep in a warm place to proof for 30 minutes.
  • Set oven at 350°F to preheat.
  • When buns have proofed, remove cover then brush each of them with reserved egg white.
  • Place in the oven to bake for about 15 minutes or until buns are golden brown.
  • Transfer immediately to a cooling rack. Serve warm.

    How much should this rise with the first rise? I’ve made this twice now and haven’t gotten much of a rise

      Hi Nicole,
      It should double in size. If it isn’t rising it may be that your yeast is too old/inactive. Try using newer yeast and if it proofs successfully in the milk, it should be good to go. I hope that helps!
