I am back after my longest hiatus in a while! I can’t even make any promises about how consistent future posts will be considering how occupied I have been these last couple of months. But I will try my best. I have been wanting to share this recipe with you for a while now as well as some more Fall themed ones. But I am not even ready for Fall though it is very much here. So before we delve into the pumpkin and more Fall-ish recipes, let’s begin with this Baked Matcha Mochi with a White Chocolate Ganache recipe.

I love almost anything mochi; ice cream, donuts, butter mochi, etc. Something about the chewy texture makes it so satisfying. I am also kind of obsessed with matcha and have been consuming my share of matcha flavored drinks and snacks this year. So I figured I should make matcha flavored mochi bars but be extra and add a while chocolate ganache. Well let me tell you, this combo works beautifully. So if you enjoy mochi, matcha and white chocolate, go grab the ingredients and make this recipe because you will love it.

Baked Matcha Mochi with a White Chocolate Ganache

Ingredients

  • 8 oz Mochiko rice flour (half a box)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tbsp matcha
  • 1/4 cup butter melted
  • 3/4 cup white sugar
  • 2 eggs
  • 1 1/2 cup whole milk
  • 1 tsp vanilla extract

White Chocolate Ganache

  • 1 1/3 cup white chocolate chips or discs or chunks,
  • 1/3 cup heavy 

Instructions

  • Preheat oven to 350ºF. Line an 8 or 9 inch square pan with parchment paper. Grease it and set it aside.
  • In a bowl, mix together Mochiko rice flour, baking powder and salt.
  • Sift in the matcha into the flour mixture making sure there are no clumps. Mix until fully combined.
  • In another bowl, mix together butter, sugar, eggs, milk and vanilla until fully combined.
  • Pour the wet mixture into the dry mixture and mix until smooth.
  • Pour the batter into your lined and greased pan. Bake for 40 to 50 minutes or until the top browns slightly throughout. Set aside and let it cool.
  • In a separate bowl, pour in the white chocolate chips. Heat up the heavy cream until steaming but not boiling.
  • Pour hot heavy cream over chocolate chips. Let them sit for a minute to melt then mix until fully combined and smooth.
  • After mochi has cooled completely, spread ganache over bars. Cut them in squares and enjoy.
