Salmon in Lemon Cream Sauce

This Salmon in Lemon Cream Sauce recipe is great for those days when you don’t feel like cooking but you gotta eat and you want to eat something good. It is really easy to make, it needs very little prepping and few utensils, and it doesn’t take long to cook. In 25 minutes or less, you get tender and flaky salmon fillets covered in a rich, tangy and fragrant creamy sauce. Get your sides going as you make it and in no time you will have a complete dinner.

Salmon is probably my favorite fish. To me it is one of those proteins that just needs salt and pepper to be great yet it is also so versatile. But as much as I can eat salmon baked or pan seared with a few ingredients every day, it is nice to be a little extra every now and then. This salmon in lemon cream sauce is a bit extra but at the same time so simple. Serve it over rice, pasta/noodles, mashed potatoes or another starch, and with vegetables of your choice. And you will have a restaurant quality meal without the bill. So go ahead and get these ingredients so you can treat yourself and loved ones to this dish.

Some Tips
  • Make sure you season your salmon generously with salt and pepper before searing it. Generally, do this with meats, fish and other proteins before they get into the pan to make them more flavorful.
  • If you don’t have white wine nor want to use alcohol, you may replace the white wine with vegetable broth or another type of broth on hand.
  • The recipe calls for 3 tablespoons of lemon juice. If you prefer a more tangy sauce, add more lemon juice. Or if you prefer it less tangy, start with 2 tablespoons or add a few tablespoons of water to dilute the sauce a little. As always, taste for seasoning before you finish cooking so you can make any adjustments if you wish.

Ingredients

  • 4 salmon fillets
  • 1 tbsp oil
  • 1 tbsp butter
  • 1 small onion thinly sliced
  • 3 cloves garlic (about 1 tbsp) minced
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 3 tbsp lemon juice
  • 1/4 tsp lemon zest
  • 1/2 tsp paprika
  • 1/4 tsp cayenne
  • 1/4 tsp black pepper
  • 1/2 tsp salt or to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  • Season the salmon fillets generously with salt and pepper on both sides.
  • Heat oil in a pan over medium heat. Add salmon fillets to the pan and brown on both sides (1-2 minutes per side), then set aside.
  • Add butter to the pan. When melted add onions and cook until translucent. Then stir in garlic.
  • When garlic is fragrant, add heavy cream, white wine and lemon juice to the pan then stir.
  • Next add lemon zest, paprika, cayenne, pepper, salt and half of your parsley. Stir and bring to a simmer.
  • When the sauce begins to simmer, return the salmon to the pan. Ladle some sauce over the fillets, place a lid on the pan and let simmer for 7 to 10 minutes.
  • When it is ready, top with remaining parsley and serve with sides of your choice.
