Almond Pound Cake

Today’s recipe is a delicious almond pound cake. Unlike the regular pound cake, this one is buttery with a soft almond flavor and a light and tender crumb from almond meal. It may look plain but it is a tasty treat that is perfect as a snack with some tea, or as breakfast, if you are like me. Trust me when I say this cake does not need any glaze or frosting or anything else. It is perfect in its simplicity. Let me tell you how this cake came to be.

You know the expression “necessity is the mother of invention”? In other words, when you are desperate, that’s often when you have some of your best ideas and create the most amazing things. This was me back in 2013. I was so broke! 😭 As I was watching my money dwindle it became real that I was about to be penniless. So I decided I was going to start selling cakes.

I used my last pennies to buy supplies. Then I spent a couple of weeks developing cake recipes and testing them on my family. I remember pulling an all-nighter determining how much to charge for each item and creating flyers. I took these flyers to a church event the next day and started handing them out left and right. Those cakes saved my behind cus I was about to be real poor lol. They were such a hit that if I had stayed in Georgia I may have looked into opening a bakery.

This almond pound cake was one of the additions to my second menu. After the first round of cakes, I just kept on thinking of more items I could add to my list. Now for those of you who have tried my cakes and have asked if I will share the recipes; I’m not doing that yet lol. But I will share some of the loaf cake recipes like this one. Plus I have already shared some other recipes from my menu with you. My pumpkin bread, a variation of my mother’s zucchini bread, and my puff puff were all part of the menu at some point. Almond Pound Cake

Ingredients

  • 3/4 cup butter softened
  • 1 cup sugar
  • 3 eggs
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1/4 cup milk
  • 1 cup all purpose flour
  • 1 cup almond meal
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions

  • Preheat oven to 325ºF. Grease a loaf pan and set aside.
  • In a large bowl, beat together butter and sugar until creamy.
  • Add eggs followed by almond and vanilla extract. Beat until fully combined.
  • Then add milk and mix until combined.
  • Next add all purpose flour, almond flour, baking powder and salt. Mix until smooth.
  • Pour batter into loaf pan and smooth it out. Transfer to preheat oven and bake for 40 to 45 minutes, or until tooth pick inserted in the middle comes out clean.
  • Let cool before slicing and serving.
