Black Eyed Peas Soup

Happy new year! To begin the year, I have a Black Eyed Peas Soup recipe for you. Black eyed peas, greens and pork are all ingredients said to bring good health, wealth and luck, and they are all present in this recipe. If you want some extra good fortune, serve this with cornbread on the side; it is also said to bring wealth. Now I am not superstitious or anything but since covid is still to be continued, this recipe doesn’t hurt.

This Black eyed peas soup is light and nutritious yet filling, fragrant and delicious. I came up with this recipe back in college when I was more health conscious and wanted some light recipes that I would still enjoy. Now is the perfect time for this recipe; apart from the good fortune going into a new year, it is also a very warming and comforting recipe for the winter. And it is great for those who want to enter the new year on a lighter note after all the holiday foods we just had.

Some tips for this recipe:
  • You will need cooked black eyed peas for this recipe. I bought dried black eyed peas and cleaned and cooked them the night before according to the packaging instructions. You can do this too and leave them slightly under cooked so they can finish off in the soup. If you don’t want to do this, you can buy frozen or canned black eyed peas instead. If using canned, make sure you rinse them off first.
  • Prep all your ingredients before you start cooking. Especially the collard greens and black eyed peas. It will be really easy to overcooking your sweet potatoes it you don’t have these ingredients prepped beforehand. I used the washed and chopped greens to save me some time. Also if you want your greens to cook longer, you can add them in with the sweet potatoes.
  • Always check for seasoning before turning the heat off. If it doesn’t have enough salt, add some. If it has too much salt, you can add a little water. You may know by now that most of my recipes say salt and pepper to taste. That is because not everyone’s salt preference is the same and I trust y’all to salt your food the way you like it.

Black Eyed Peas Soup

Ingredients

  • 1 tbsp oil
  • about .75 pounds Italian sausage
  • 1 small onion, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 large sweet potato, cubed
  • 2 cups broth vegetable, beef or chicken
  • 2.5 cups black eyed peas, cooked
  • 1 pound collard greens, washed and chopped
  • 1/2 tsp cayenne pepper
  • 1/4 tsp paprika
  • 1/4 tsp thyme
  • salt and pepper to taste

Instructions

  • Heat oil in a pot over medium high heat. Add sausage and cook until no pink is visible.
  • Stir in onions and celery to pot. Cook until they are tender and onions is translucent then mix in garlic and ginger.
  • When garlic and ginger is fragrant, add in sweet potatoes followed by broth. (If using frozen black eyed peas, add them now)
  • Add cayenne, paprika, thyme, salt and pepper. Stir to combine then cover and let cook for about 3 to 5 minutes.
  • Next add in collard greens followed by black eyed peas. Stir and cook for an additional 10 to 15 minutes or until everything is well cooked.
  • Taste for salt and adjust as needed. Serve warm on its own or with cornbread on the side.
