I know it’s been a minute since I posted a recipe; times are hard 😩 But! I couldn’t let the 4th of July go by without sharing this recipe with you. These fruit pizza cookies are truly so delicious (and hard to stop eating). And because they are individual cookies, you don’t need to worry about people slicing them all kinds of ways and making a mess. Plus if you want to be a little cautious considering this ongoing pandemic, you could package them individually. But before you make them, below are a few things to consider.

Some Tips
  • My cookie dough recipe is pretty amazing but if you want to cut down on some time, you may used a store bought sugar cookie dough.
  • Though I used blueberries, strawberries and kiwis for this recipe, you may use other types of fruits as well. Mangos, grapes, blackberries, papayas, you name it.
  • If you still prefer the idea of one large cookie pizza, then feel free to go that route instead. You will just have to bake the cookie for a longer period of time (about 15 to 20 minutes). And I suggest baking it at 325ºF instead or 350ºF.
  • Even though serving them at room temperature isn’t a deal breaker, these cookies are best served cold. So if making them for an event, make them hours in advance so you can give them enough time to cool after baking and once more after assembling.
