Valentine’s Day is coming up! For me it is just the day before I can buy chocolate for cheap. I don’t remember ever feeling any particular way about Valentine’s day or doing anything out of the ordinary for it. But I know a lot of you may be making plans for it so how about you add these Red Velvet Bars to your plans. Whether you love Valentines day or hate it, it is still a good reason to make these bars either for a special someone or for yourself because why not.

If a red velvet cake and a blondie had a baby, you will get these bars. I don’t know if I like the sound of Reddies or Red Velveties though so I will stick to Red Velvet Bars. They are buttery, sweet and gooey with a subtle cocoa flavor just like red velvet cake and they are topped with a cream cheese frosting. You don’t even need the frosting but it adds some more flavor to the bars making them the perfect treat to indulge in. So if you would like to treat yo’ self, go get you the ingredients and follow the recipe below.

Red Velvet Bars

This recipe yields 24 to 32 bars.

The Bars

  • 1 cup melted butter (2 stick)
  • 2 cups brown or light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 1/4 cup cocoa powder
  • 4 teaspoons red gel food coloring
  • 2 1/2 cups flour

The Frosting

  • 8 oz softened cream cheese
  • 6 tablespoons softened butter
  • 1 tsp vanilla
  • 1 1/3 cups powdered sugar

Method

Preheat the oven to 350ºF. Line a 9 by 13 inch baking pan with parchment paper or spray it with oil spray.

In a large bowl, mix melted butter, brown sugar and eggs until completely combined. Mix in vanilla, salt and cocoa powder then add the food coloring and mix until the batter is thoroughly red. Lastly carefully mix in the flour until combined. Spread the dough evenly in your prepared pan. Bake it for 25 to 30 minutes or until a toothpick inserted in the middle comes out with no dough on it.

In another bowl, beat together the cream cheese, butter, vanilla and powdered sugar until completely creamed. Let the bar cool completely before frosting it. After frosting it, cut it into bars and enjoy.
