Chunky Blue Cheese Dressing

It’s game day for those of you who are watching! For me it is just another Sunday. Here is a recipe that will go really well with those buffalo wings from last week. This chunky blue cheese dressing is better than any one you will buy at the store. It is creamy yet full of chunks and very flavorful. And apart from the blue cheese, you probably already have these ingredients at home so grab what you need and give it a try.

A lot of blue cheese dressings have buttermilk and different ratios of mayo to sour cream but I wanted to keep it simple and I prefer the taste with more sour cream versus mayonnaise. Some of the ingredients don’t have set measurements in this recipe. This is where you can rely on your preference and adjust the seasoning as needed. Start out with two tablespoons of vinegar or lemon juice, mix and taste then you can either keep it that way or add another tablespoon if you want it to be more acidic. The two tablespoons of milk are optional because this depends on if you want to have a thicker or thinner dressing. After mixing it all together, taste for salt and pepper and add more if desired.

Chunky Blue Cheese Dressing

This recipe yields about two cups of dressing.

  • 1/2 cup mayonnaise
  • 3/4 cup sour cream
  • 3/4 cup blue cheese plus extra for topping
  • 2 to 3 tablespoons vinegar or lemon juice
  • 2 tablespoons milk (optional)
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Method

In a bowl, combine mayonnaise, sour cream, two tablespoons lemon juice or vinegar, garlic powder, salt and pepper. You can add the blue cheese at this point and mix or for a slightly chunkier dressing you can mix everything else until combined before mixing in the blue cheese. Your dressing will be pretty thick at this point. You can add a couple tablespoons of milk if you want a thinner dressing. Taste for salt and acidity and adjust seasoning and vinegar or lemon juice as needed. Top with some extra blue cheese to serve. Enjoy!
